Instructions
- Mix the graham cracker crumbs with the melted butter in a medium bowl until the texture resembles wet sand.
- Divide the graham cracker mixture evenly among 6 serving glasses or dessert cups.
- Press the crumb mixture firmly into the bottom of each glass using the back of a spoon.
- Refrigerate the prepared bases for 15 minutes to set.
- Beat the softened cream cheese in a large bowl for 2 minutes, until smooth and creamy.
- Add the pistachio butter and beat on medium speed for 1 minute, until evenly combined.
- Gradually add the powdered sugar, scraping down the sides of the bowl as needed.
- Mix in the vanilla extract and sea salt until incorporated.
- Whip 3/4 cup of the heavy whipping cream separately until stiff peaks form.
- Gently fold the whipped cream into the pistachio cheesecake mixture until airy and smooth.
- Spoon the pistachio cheesecake filling evenly over the chilled graham cracker bases.
- Combine the fresh blackberries, granulated sugar, and lemon juice in a saucepan over medium heat.
- Cook the blackberry mixture for 5 minutes, until the berries release their juices and form a compote.
- Cool the blackberry compote completely before assembling the remaining layers.
- Spoon the cooled blackberry compote carefully over the pistachio cheesecake filling.
- Whip the remaining 3/4 cup heavy whipping cream until fluffy.
- Top each tower with whipped cream, creating decorative peaks with the back of a spoon.
- Garnish with crushed pistachios and additional fresh blackberries.
- Refrigerate the assembled cheesecake towers for at least 4 hours before serving.
- Serve chilled.

Use room-temperature cream cheese for a silky filling, cool the blackberry compote completely before layering, and chill the assembled towers thoroughly for the best structure and flavor.
