Ingredients

8 oz soba or rice noodles
1 cup shelled edamame
1 cup shredded carrots
1 cup sliced cucumber
1 red bell pepper, halved and sliced
1/4 cup soy sauce (or tamari for gluten-free)
2 tbsp lime juice
1 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or maple syrup
1 tbsp freshly grated ginger
1 clove garlic, minced
2 scallions, sliced
1/4 cup chopped cilantro
2 tbsp toasted sesame seeds

Instructions

Cook noodles according to package instructions. Drain and toss with 1 tsp sesame oil to prevent sticking.
Blanch edamame for 2-3 minutes until tender. Drain and shock in ice water to retain green color.
In a large bowl, combine noodles, edamame, carrots, cucumber, and red bell pepper.
In a separate bowl, whisk together soy sauce, lime juice, rice vinegar, sesame oil, honey, grated ginger, and minced garlic.
Pour dressing over salad and toss to coat evenly. Garnish with scallions, cilantro, and sesame seeds.

Notes

Use fresh ginger for maximum flavor
Adjust soy sauce to taste
Store leftovers in an airtight container in the fridge for up to 2 days
Add grilled tofu for extra protein
