- 2 pounds rendered beef fat or beef fat for rendering
- 2 to 4 tablespoons filtered water, optional
- 1/4 teaspoon sea salt, optional
- 1 to 2 teaspoons dried herbs such as rosemary, thyme, or oregano, optional
Instructions
- Obtain 2 pounds of high-quality beef fat from a butcher or saved beef trimmings.
- Cut the beef fat into small half-inch cubes.
- Place the beef fat cubes in a slow cooker or heavy-bottomed pot over low heat.
- Render slowly for 3 to 4 hours, stirring occasionally, until the fat is fully melted.
- Strain the rendered tallow through cheesecloth or a fine mesh strainer into a clean glass container.
- Discard the crispy beef solids left behind after rendering.
- Let the rendered tallow cool to room temperature.
- Refrigerate overnight until completely solid.
- Remove the solidified tallow from the refrigerator.
- Cut the cold tallow into 1-inch cubes.
- Place the tallow cubes into a stand mixer bowl or food processor.
- Add 2 to 4 tablespoons filtered water if a lighter, airier texture is desired.
- Attach the whisk attachment to the stand mixer.
- Whip on medium speed until the tallow begins to break down.
- Continue whipping for 5 to 7 minutes, until the color changes from pale yellow to white.
- Increase the speed to medium-high once the mixture becomes creamy and light.
- Whip for another 3 to 5 minutes until the tallow reaches maximum volume and a fluffy texture.
- Add sea salt and dried herbs during the final minute of whipping if using.
- Transfer the finished whipped beef tallow to clean glass jars or airtight containers.
- Refrigerate until ready to use or enjoy immediately.
Notes
Start with cold, fully solidified tallow for the best whipped texture. Add water gradually to avoid separation, and stop whipping once the tallow becomes fluffy and white. Store in glass jars in the refrigerator for best quality.
