Ingredients
- 1.5 lbs Chicken Breast (or chicken thighs)
- 1.5 cups White Rice (Basmati or jasmine)
- 2 cups Shredded Cheese (Monterey Jack or mild cheddar)
- 1 cup Heavy Cream
- 3 cups Chicken Broth (Low sodium preferred)
- 2 tbsp Taco Seasoning
Instructions
- Season the chicken breasts thoroughly with taco seasoning to build the base flavor.
- Heat a large skillet over medium-high heat with a tablespoon of olive oil until it shimmers. Sear the chicken on both sides until a golden-brown crust forms, then remove and set aside.
- Sauté minced onions or bell peppers in the same skillet to capture the browned bits. Add the uncooked rice and toast it briefly to unlock its nutty fragrance.
- Pour in the chicken broth, bring to a gentle boil, reduce heat to a simmer, and cover tightly with a lid until the rice absorbs the liquid.
- Whisk the heavy cream and shredded cheese together in a separate bowl until smooth, then stir the cheese mixture into the cooked rice until melted into a decadent sauce.
- Nestle the seared chicken back into the pan, cover with creamy rice to finish cooking, and garnish with fresh cilantro or green onions before serving.
Notes
Use room temperature cream to prevent the cheese sauce from curdling when added to the hot rice. Freshly grate your cheese from a block rather than using pre-shredded bags to ensure the sauce stays emulsified. Rest the chicken for five minutes after cooking to allow the juices to redistribute.
