Ingredients

Scale
  • 350g Bread Flour
  • 30g Bread Flour (for tangzhong)
  • 180ml Whole Milk, room temperature
  • 150ml Milk (for tangzhong)
  • 5g Instant Yeast
  • 40g Sugar
  • 30g Unsalted Butter, softened to room temperature
  • 5g Sea Salt

Instructions

  1. Whisk together 30g of bread flour and 150ml of milk in a small saucepan until smooth.
  2. Cook over medium-low heat until it thickens into a paste, then remove from heat and let cool completely.
  3. Combine the remaining flour, sugar, salt, and yeast in a large mixing bowl.
  4. Add the cooled tangzhong paste and remaining milk to the dry ingredients.
  5. Knead until a shaggy dough forms, then incorporate the softened butter until fully integrated and smooth.
  6. Continue kneading for 10 minutes until the dough passes the windowpane test.
  7. Cover the dough and let it rise in a warm place for 1 hour.
  8. Punch down the dough gently, divide into equal portions, shape into smooth balls, and arrange in a greased loaf pan.
  9. Let the dough rise a second time until it doubles in size.
  10. Bake at 350 degrees Fahrenheit for 30 minutes until golden brown and hollow-sounding.

Notes

Monitor milk temperature closely to keep yeast active. Use a digital scale for measuring flour to avoid packing. Ensure the tangzhong is completely cool before adding to yeast dough. Check that internal temperature reaches 190 degrees Fahrenheit. Cover with foil if the loaf darkens too quickly during baking.
