Ingredients
8 oz rotini pasta
1 ½ cups fresh raspberries
¼ cup apple cider vinegar
2 tbsp honey
1 tbsp Dijon mustard
¼ cup olive oil
¼ cup chopped pecans
1 cup diced cucumber
½ cup diced red bell pepper
½ cup halved cherry tomatoes
¼ cup chopped red onion
1 tsp salt
½ tsp black pepper
Instructions
Boil pasta in salted water until al dente; drain and cool
Combine raspberries, apple cider vinegar, honey, mustard, and 1 tbsp olive oil in blender; process until smooth
Heat remaining oil in skillet over medium heat; toast pecans until fragrant
In large bowl, mix cooled pasta, cucumber, bell pepper, tomatoes, red onion, salt, and pepper
Pour dressing over pasta; toss to coat
Sprinkle toasted pecans on top and gently mix
Chill 30 minutes before serving
Notes
Use apple cider vinegar as non-alcoholic substitute for red wine vinegar
Toast pecans in advance for max crunch
Store airtight up to 2 days
