Instructions

- Pat each strawberry completely dry with clean paper towels to ensure the sugar sticks correctly during the process.
- Remove the green stems carefully without piercing the flesh of the fruit to prevent juices from leaking.
- Thread 3 to 4 strawberries onto each wooden skewer, ensuring they are spaced evenly so they do not touch.
- Combine the sugar and water in a deep, small saucepan to allow for easy dipping.
- Heat the mixture over medium heat without stirring to prevent premature sugar crystallization.
- Insert a candy thermometer into the saucepan to monitor the syrup temperature closely.
- Boil the syrup until it reaches exactly 300 degrees Fahrenheit (the hard-crack stage).
- Remove the pan from heat immediately once 300°F is reached to prevent burning or caramelization.
- Dip each skewer of strawberries into the hot syrup quickly, using a swirling motion to get an even, thin layer.
- Place dipped skewers on parchment paper to cool and harden for approximately 5 minutes until completely set.
Notes
Ensure the strawberries are 100% dry; even a tiny drop of moisture will prevent the sugar coating from hardening properly. Do not stir the sugar and water after the sugar has dissolved to prevent crystallization. Work quickly once the syrup reaches 300°F as it sets fast.
