Ingredients

4 boneless, skinless chicken breasts
8 oz rice noodles
1 red bell pepper, thinly sliced
1 carrot, julienned
1/2 cucumber, julienned
1/4 cup chopped cilantro
1/4 cup chopped peanuts
2 tbsp sweet chili sauce
2 tbsp soy sauce (non-alcoholic)
2 tbsp rice vinegar
1 lime, juiced
1 tbsp sesame oil
1 tbsp cornstarch mixed with 2 tbsp water (for sauce thickener)
Vegetable oil for frying

Instructions

Bring a pot of water to a boil for the noodles. Boil rice noodles according to package instructions (usually 2-3 minutes), drain, and set aside.
In a shallow bowl, mix cornstarch with 2 tbsp water. Dredge chicken breasts in the mixture until coated.
Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat. Fry chicken until golden and cooked through (4-5 minutes per side). Transfer to a paper towel-lined plate to drain.
In a small bowl, whisk sweet chili sauce, soy sauce, rice vinegar, lime juice, and 1/2 tsp sugar until smooth.
In the same skillet, sauté bell pepper, carrot, and cucumber in remaining oil until slightly softened (2-3 minutes). Add cooked noodles and toss to combine.
Pour sauce over the noodle-vegetable mixture. Simmer 1-2 minutes until sauce thickens.
Top with crispy chicken, cilantro, chopped peanuts, and a drizzle of extra sweet chili sauce. Garnish with lime wedges.

Notes

For extra crispiness, fry chicken at 350°F (175°C). Adjust chili sauce sweetness to taste. Can substitute zucchini or snap peas for additional crunch. Store leftovers in an airtight container in the fridge for up to 2 days.
