- 3 packets unflavored gelatin powder
- 1 cup cold water
- 1 pound fresh strawberries
- 8 ounces fresh blueberries
- 1 cup full-fat coconut milk
- 1/2 cup erythritol sweetener
- 3 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 6–8 fresh mint leaves, optional garnish
Instructions
- Rinse the fresh strawberries and blueberries under cool running water.
- Pat the berries completely dry with paper towels.
- Hull the strawberries and slice them into 1/4-inch pieces.
- Divide the berries evenly among 6 individual serving glasses or one large bowl.
- Pour the cold water into a small saucepan.
- Sprinkle the unflavored gelatin evenly over the surface of the cold water.
- Let the gelatin bloom for 5 minutes without stirring.
- Place the saucepan over low heat.
- Stir constantly for about 3 minutes until the gelatin dissolves completely.
- Remove from heat once the gelatin becomes clear and smooth.
- Add the erythritol sweetener, lemon juice, vanilla extract, and sea salt.
- Stir until the sweetener dissolves completely.
- Add the coconut milk while whisking constantly.
- Pour the mixture through a fine-mesh strainer to remove any lumps.
- Divide the gelatin mixture evenly among the glasses containing berries.
- Fill each glass about three-quarters full.
- Transfer the glasses to the refrigerator immediately.
- Refrigerate for at least 4 hours, preferably overnight, until fully set.
- Test by gently tilting a glass; the gelatin should jiggle but hold its shape.
- Remove from the refrigerator 5 minutes before serving.
- Garnish each serving with fresh mint leaves.
- Serve cold.
- Store leftovers in airtight containers in the refrigerator for up to 7 days.
Notes
Bloom the gelatin for the full 5 minutes to prevent lumps. Use low heat when dissolving gelatin, then strain the mixture for the smoothest texture. Prepare overnight for the most reliable set and best flavor.
