12 oz rotini or penne pasta
6 oz fully cooked smoked turkey, sliced
1 cup avocado, diced
1 cup cherry tomatoes, halved
1 cup chopped romaine lettuce
1/2 red onion, thinly sliced
1 celery stalk, diced
1 cup crispy plant-based bacon crumbs
1/2 cup mayonnaise
1 tbsp fresh lemon juice
1 tsp chopped chives
1 tsp white wine vinegar
Salt and pepper to taste
1 tbsp olive oil

Instructions

Cook pasta according to package instructions, then drain and rinse with cold water.
In a large bowl, combine cooked pasta, smoked turkey, avocado, cherry tomatoes, romaine, red onion, celery, and plant-based bacon.
In a small bowl, mix mayonnaise, lemon juice, chives, vinegar, salt, and pepper. Drizzle dressing over salad.
Toss gently to coat. Refrigerate 15–30 minutes for flavors to meld.
Top with additional chives before serving.

Notes

Substitute plant-based bacon for traditional bacon to meet halal requirements.
