- 12 Medjool Dates (soft and pitted)
- 1/2 cup Dark Chocolate (70% cocoa or higher)
- 1/4 cup Toasted Pecans (or walnuts)
- 2 tbsp Shredded Coconut (optional for added texture)
Instructions
- Slice each Medjool date open lengthwise using a small paring knife and remove the pit carefully.
- Arrange the dates on a parchment-lined baking sheet and smash each date down firmly with the back of a spoon to create a flat, open surface.
- Place a square of dark chocolate into the center of each flattened date and sprinkle chopped pecans over the chocolate.
- Bake in a preheated oven at 350 degrees Fahrenheit until the chocolate softens.
- Remove the tray carefully and finish with a light dusting of shredded coconut. Serve warm.
Notes
Use a hot oven or toaster oven to heat quickly without drying out the fruit base. Add a pinch of sea salt on top of your recipe to balance the intense sweetness of the dates and enhance the chocolate.
