- 6 medium fresh nectarines, firm but ripe
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1/4 teaspoon sea salt
- 1.5 cups Greek yogurt, full-fat
- 3/4 cup raw pistachios, unsalted and shelled
- 3 tablespoons sesame seeds
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon sumac powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried mint
- Fresh mint leaves, for garnish
Instructions
- Toast raw pistachios in a dry skillet over medium heat for 4 to 5 minutes, stirring frequently until fragrant and lightly darkened.
- Transfer toasted pistachios to a food processor and pulse until coarsely chopped with visible pieces.
- Add sesame seeds to the food processor with pistachios and pulse 2 to 3 times to combine.
- Stir in ground cumin, ground coriander, sumac powder, black pepper, and dried mint by hand using a small bowl, then set aside.
- Preheat your oven to 400 degrees Fahrenheit, rinse nectarines, and pat dry with paper towels.
- Slice each nectarine in half by cutting around the pit, gently twist to separate halves, and remove the pit carefully.
- Arrange nectarine halves cut-side up on a parchment-lined baking sheet, drizzle with honey and olive oil, and sprinkle lightly with sea salt.
- Roast in the preheated oven for 20 to 25 minutes until nectarines are golden, caramelized, and tender, then let cool for 5 minutes.
- Divide Greek yogurt evenly among four serving bowls or plates.
- Arrange warm roasted nectarine halves on top of yogurt, drizzle with any pan juices, sprinkle generously with prepared pistachio dukkah, garnish with fresh mint leaves, and serve immediately.
Notes
Select peak-season nectarines that yield slightly to gentle pressure. Toast dukkah components separately to enhance flavor development. Always assemble just before serving to prevent the dukkah from losing its crispy texture.
