- 2 cups fresh mango puree
- 1 cup filtered water
- 3/4 cup granulated sugar
- 3 tablespoons fresh lime juice
- 1/4 teaspoon sea salt
Instructions
- Select two ripe mangoes with slight give when gently squeezed.
- Peel the mangoes using a vegetable peeler or sharp knife.
- Slice the flesh away from the pit and cut it into chunks.
- Place the mango chunks into a blender.
- Blend for about 90 seconds until completely smooth.
- Strain the mango puree through a fine-mesh sieve to remove fiber.
- Combine filtered water and granulated sugar in a small saucepan over medium heat.
- Stir occasionally until the sugar dissolves completely.
- Simmer the sugar syrup for 2 minutes without boiling.
- Remove from heat and let the simple syrup cool to room temperature.
- Pour the cooled simple syrup into a blender with the strained mango puree.
- Add fresh lime juice and sea salt.
- Blend on high speed for 30 seconds until fully combined.
- Taste the mixture and adjust sweetness or acidity if needed.
- Pour the sorbet mixture into your Ninja Creami cup up to the maximum fill line.
- Secure the lid and place the cup in the freezer.
- Freeze for at least 24 hours until completely solid.
- Remove the frozen cup from the freezer and let it sit at room temperature for exactly 2 minutes.
- Insert the frozen cup into your Ninja Creami machine.
- Select the sorbet setting and process for about 40 seconds.
- Serve immediately in chilled serving glasses.
Notes
Use ripe Ataulfo or Alphonso mangoes for the best flavor. Strain the mango puree for an ultra-smooth texture. Freeze the Ninja Creami cup for the full 24 hours before processing, and serve immediately for the best creamy ribbon texture.
