This simple Mango Pancakes Recipe provides a bright and refreshing way to start your morning with fluffy batter and the perfect balance of sweet tropical mango flavor in every bite.

  • Total Time: 30 mins
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 large ripe mangoes (1 pureed, 1 diced)
  • 1.5 cups milk
  • 2 large eggs (room temperature)
  • 2 tsp baking powder
  • 3 tbsp unsalted butter (melted and slightly cooled)
  • 1 pinch salt

Instructions

  1. Peel and dice one mango into small cubes while pureeing the second mango to integrate into the batter.
  2. In a large mixing bowl, whisk together the flour, baking powder, and a pinch of salt.
  3. In a separate bowl, combine the mango puree, milk, eggs, and melted butter until completely smooth and uniform.
  4. Pour the wet ingredients into the dry mixture, folding them together gently until just combined.
  5. Fold the reserved fresh mango cubes into the batter.
  6. Preheat a non-stick skillet or griddle over medium-low heat and lightly grease with butter or oil.
  7. Spoon approximately 1/4 cup of batter onto the hot surface for each pancake.
  8. Flip the pancakes when bubbles form on the surface and the edges look set.
  9. Cook the second side until golden brown, and serve warm immediately.

Notes

Avoid overmixing the batter to ensure light and fluffy pancakes. Keep heat on medium-low to prevent the natural sugars in the mango from burning before the center finishes cooking. Let the batter rest for 10 minutes before cooking for optimal rise. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 1 month, then reheated in a toaster or dry pan on low heat.
