Instructions
- Sift matcha powder through fine mesh strainer into small bowl to eliminate lumps.
- Heat water to approximately 160-170°F to prevent bitterness.
- Pour small amount of hot water into matcha powder.
- Whisk vigorously with bamboo whisk until fully dissolved and frothy.
- Add remaining hot water while continuing to whisk until smooth.
- Squeeze fresh lemon juice directly into prepared matcha.
- Stir gently to incorporate while maintaining foam.
- Sprinkle freshly ground black pepper into mixture, starting with a small pinch.
- Add honey and stir until fully dissolved.
- Heat milk separately to approximately 150-160°F.
- Froth milk using manual whisk, electric frother, or sealed container.
- Pour frothed milk slowly into matcha mixture, holding back foam with spoon.
- Top with reserved foam and lemon zest before serving.
Notes
Always sift matcha powder before whisking. Never use boiling water because temperatures above 170°F create bitterness. Add lemon juice after whisking matcha completely, and start with minimal black pepper so the flavor stays balanced.
