  7. Stir gently to incorporate while maintaining foam.
  8. Sprinkle freshly ground black pepper into mixture, starting with a small pinch.
  9. Add honey and stir until fully dissolved.
  10. Heat milk separately to approximately 150-160°F.
  11. Froth milk using manual whisk, electric frother, or sealed container.
  12. Pour frothed milk slowly into matcha mixture, holding back foam with spoon.
  13. Top with reserved foam and lemon zest before serving.

Notes

Always sift matcha powder before whisking. Never use boiling water because temperatures above 170°F create bitterness. Add lemon juice after whisking matcha completely, and start with minimal black pepper so the flavor stays balanced.
