Ingredients
1 lb ground beef (85% lean)
2 medium sweet potatoes (about 8 oz), cubed
1 red onion, halved and sliced
1 1/4 cup low-fat cottage cheese
1 tbsp chopped fresh cilantro
1/4 cup hot honey glaze (1/2 cup honey + 1 tbsp hot sauce, blended)
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes and red onion with olive oil, salt, and pepper. Roast 25 minutes.
Heat skillet over medium-high heat. Cook beef until browned (5-6 minutes). Season with salt and pepper.
Assemble bowls: Layer hot beef, roasted vegetables, and cottage cheese. Drizzle with hot honey glaze. Garnish with cilantro.
Notes
For thicker glaze, refrigerate 10 minutes before serving
Substitute quinoa for grain base if desired
