  • Total Time: 6 hours 15 minutes
  • Yield: 24 pieces 1x

Ingredients

Scale
  • 2 tablespoons horse gelatin powder
  • 3 tablespoons cold filtered water
  • 1 cup fruit juice or liquid base
  • 2 tablespoons sugar or sweetener
  • 1 teaspoon citric acid or lemon juice
  • 3/4 cup fresh fruit pieces or herbs, optional
  • 1 teaspoon neutral oil or gelatin spray, optional

Instructions

  1. Pour 3 tablespoons of cold filtered water into a small glass mixing bowl.
  2. Sprinkle 2 tablespoons of horse gelatin powder evenly across the water surface without stirring.
  3. Let the gelatin sit undisturbed for exactly 3 minutes to hydrate.
  4. Gently stir the hydrated gelatin with a small whisk or fork for about 30 seconds until smooth.
  5. Pour 1 cup of fruit juice or liquid base into a medium saucepan.
  6. Add 2 tablespoons of sugar and 1 teaspoon of citric acid or lemon juice.
  7. Warm the mixture over medium heat to about 180 degrees Fahrenheit, stirring until the sugar dissolves completely.
  8. Do not allow the mixture to boil or exceed 190 degrees Fahrenheit.
  9. Remove from heat and let the liquid cool for exactly 2 minutes.
  10. Slowly pour the warm liquid into the hydrated gelatin while stirring constantly.
  11. Continue stirring for about 2 minutes until the gelatin dissolves completely.
  12. Strain the mixture through a fine-mesh strainer or cheesecloth into a clean bowl.
  13. Let the strained mixture cool to room temperature for about 5 minutes.
  14. Lightly coat silicone molds or glass containers with neutral oil or gelatin spray if desired.
  15. Pat any fresh fruit pieces or herbs completely dry before adding them to the molds.
  16. Place the fruit pieces or herbs in the bottom of the molds.
  17. Carefully pour the cooled gelatin mixture over the fruit pieces.
  18. Transfer the filled molds to the refrigerator on a stable, level shelf.
  19. Refrigerate undisturbed for at least 4 hours, or 6 to 8 hours for a firmer set.
  20. Check firmness by gently pressing the surface with your fingertip.
  21. Once fully set, loosen the edges with a warm thin-bladed knife if needed.
  22. Invert or unmold onto a serving plate and serve chilled.

Notes

Use premium culinary-grade horse gelatin with a bloom strength of at least 200. Hydrate the gelatin fully before adding warm liquid, keep the liquid below boiling, and always strain the mixture for the clearest professional finish.
