- 1 teaspoon citric acid or lemon juice

- 1 teaspoon neutral oil or gelatin spray, optional
Instructions
- Pour 3 tablespoons of cold filtered water into a small glass mixing bowl.
- Sprinkle 2 tablespoons of horse gelatin powder evenly across the water surface without stirring.
- Let the gelatin sit undisturbed for exactly 3 minutes to hydrate.
- Gently stir the hydrated gelatin with a small whisk or fork for about 30 seconds until smooth.
- Pour 1 cup of fruit juice or liquid base into a medium saucepan.
- Add 2 tablespoons of sugar and 1 teaspoon of citric acid or lemon juice.
- Warm the mixture over medium heat to about 180 degrees Fahrenheit, stirring until the sugar dissolves completely.
- Do not allow the mixture to boil or exceed 190 degrees Fahrenheit.
- Remove from heat and let the liquid cool for exactly 2 minutes.
- Slowly pour the warm liquid into the hydrated gelatin while stirring constantly.
- Continue stirring for about 2 minutes until the gelatin dissolves completely.
- Strain the mixture through a fine-mesh strainer or cheesecloth into a clean bowl.
- Let the strained mixture cool to room temperature for about 5 minutes.
- Lightly coat silicone molds or glass containers with neutral oil or gelatin spray if desired.
- Pat any fresh fruit pieces or herbs completely dry before adding them to the molds.
- Place the fruit pieces or herbs in the bottom of the molds.
- Carefully pour the cooled gelatin mixture over the fruit pieces.
- Transfer the filled molds to the refrigerator on a stable, level shelf.
- Refrigerate undisturbed for at least 4 hours, or 6 to 8 hours for a firmer set.
- Check firmness by gently pressing the surface with your fingertip.
- Once fully set, loosen the edges with a warm thin-bladed knife if needed.
- Invert or unmold onto a serving plate and serve chilled.
Notes
Use premium culinary-grade horse gelatin with a bloom strength of at least 200. Hydrate the gelatin fully before adding warm liquid, keep the liquid below boiling, and always strain the mixture for the clearest professional finish.
