Ingredients

1 cup unsalted creamy peanut butter
3/4 cup melted white chocolate (non-alcoholic)
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 scoop unflavored whey or plant-based protein powder
1/4 cup rolled oats (or gluten-free if desired)
1/4 tsp salt

Instructions

In a large bowl, mix peanut butter, melted white chocolate, honey or maple syrup, and vanilla extract until smooth.
Stir in protein powder until fully incorporated.
Fold in rolled oats and salt.
Refrigerate the mixture for 10-15 minutes to make it easier to handle.
Using a small cookie scoop or tablespoon, roll the mixture into 24 bite-sized balls.
Place the bites on a parchment-lined tray and chill in the refrigerator for at least 30 minutes to firm up.

Notes

Store refrigerated bites in an airtight container for up to 1 week.
For an extra texture, sprinkle additional oats or crushed nuts on top before chilling.
These bites can be frozen for up to 3 months for longer storage.
If the mixture is too sticky, refrigerate it a bit longer before rolling.
