Ingredients

1/2 cup almond butter (natural, unsweetened)
1 scoop vanilla protein powder (25g)
1/4 cup honey (or maple syrup for vegan)
1 tsp vanilla extract
1/4 tsp salt
1/4 cup chopped almonds (optional)
2 tbsp chia seeds (optional)

Instructions

Combine oats, protein powder, salt, almond butter, honey, and vanilla in a mixing bowl.
Mix thoroughly until a sticky dough forms. Fold in optional chopped almonds or chia seeds.
Using hands, roll dough into 20 equal-sized balls (about 1-2 tbsp each).
Place in an airtight container and chill in refrigerator for at least 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for 2-3 months.
For vegan version, use plant-based protein powder and maple syrup.
