Ingredients

1 1/2 cups rolled oats
3/4 cup creamy almond butter
1/4 cup honey or maple syrup
1/4 cup coconut oil, melted
1/4 cup vanilla whey protein powder (unflavored or vanilla)
1/4 cup sliced almonds, chopped
2 tbsp chia seeds
1/2 tsp sea salt

Instructions

In a large bowl, mix together oats, almond butter, honey/maple syrup, melted coconut oil, and vanilla protein powder until fully combined.
Stir in chopped sliced almonds, chia seeds, and sea salt.
Press the mixture into a parchment-lined 8×8-inch baking dish, using a spatula or the back of a spoon for even distribution.
Chill in the refrigerator for at least 30 minutes to set.
Cut into 12 bars and store in an airtight container.

Notes

Store in an airtight container in the refrigerator for up to 5 days.
For maple syrup, increase total quantity by 1-2 tablespoons to achieve the same binding consistency as honey.
Add additional chia seeds or ground flaxseed for a boost in fiber and omega-3s.
Replace sliced almonds with chopped Brazil nuts or walnuts for variation.
