Ingredients

2 medium zucchini, diced
1 14-oz can diced tomatoes
3 garlic cloves, minced
2 tbsp olive oil
1 medium onion, diced
1 1/2 tsp Italian seasoning
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper

Instructions

Toss zucchini with salt; let sit 10 minutes. Pat dry.
Heat olive oil in a skillet over medium. Cook turkey until browned, 5-7 minutes.
Add onion and garlic; sauté 2 minutes. Stir in zucchini, tomatoes, Italian seasoning, paprika, salt, and pepper.
Simmer 5-7 minutes until zucchini is tender and mixture thickens. Adjust seasoning if needed.
