Ingredients
1 lb lean ground turkey
1 can black beans, drained and rinsed
1 can frozen corn, thawed
1 avocado, sliced
1 cup chopped tomatoes
1 cup shredded romaine lettuce
1 lime, cut into wedges
1/4 cup chopped fresh cilantro
2 tbsp taco seasoning (no pork/ham/lard)
1 tbsp olive oil
1 tsp smoked paprika (optional)
1/4 tsp cumin
4 cups cooked brown rice or quinoa
1 cup shredded cheddar cheese (optionally omitted for dairy-free)
1/4 cup chopped red onion
Instructions
Preheat oven to 350°F
Heat olive oil in a skillet over medium heat
Sauté red onion until softened (3-4 mins)
Add ground turkey, cook until browned (5-7 mins)
Stir in taco seasoning, cumin, smoked paprika until blended
Add black beans and corn, simmer 5 mins
Assemble bowls with rice/quinoa, turkey mixture, lettuce, tomatoes, avocado, cilantro, and lime
Adjust seasoning to taste
Chill in airtight containers for up to 4 days
Notes
Taco seasoning must be pork-free; check labels
Avocado may brown after 2+ days in fridge; store extra in acidic liquid if prepping ahead
