Ingredients
1.5 lbs ground turkey
1 medium onion, diced
2 garlic cloves, minced
2 medium carrots, diced
1 cup frozen peas
1 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
1 tsp salt
1/2 tsp black pepper
4 cups mashed potatoes (4 large potatoes, 2 tbsp butter, 1/4 cup milk)
1 cup low-fat shredded cheese (optional)
2 cups vegetable broth
Instructions
Preheat oven to 400°F (200°C)
Heat olive oil in a large skillet over medium heat
Add onions and garlic; sauté 3-4 minutes until softened
Add ground turkey; cook 5-6 minutes until browned and fully cooked
Stir in carrots, peas, thyme, rosemary, salt, and pepper; cook 5 minutes
Mix in vegetable broth; simmer 10 minutes until thickened
Transfer mixture to a 9×13-inch baking dish
Spoon mashed potatoes over the filling, spreading evenly with a spatula
Sprinkle cheese on top if using
Bake 25-30 minutes until golden and bubbly
Let rest 5 minutes before serving
Notes
Use vegetable broth instead of chicken broth for a non-meat alternative
Add cauliflower rice or extra veggies for more fiber
Freezes well up to 3 months in airtight containers
Top with a dollop of sour cream or Greek yogurt for extra creaminess
