Ingredients
1 pound (450g) 90/10 ground turkey
1 medium onion, diced
1 red bell pepper, chopped
2 garlic cloves, minced
1 can (14.5 oz/411g) crushed tomatoes
1 tsp ground cumin
1 tsp smoked paprika
½ tsp cayenne pepper
½ tsp chili powder
Salt to taste
Black pepper to taste
2 tbsp olive oil
4 large eggs
Fresh cilantro or parsley, chopped (for garnish)
Optional: crumbled feta cheese (halal-compliant if needed)
Instructions
Heat 2 tbsp olive oil in a large skillet over medium heat.
Add diced onion and sauté for 3-4 minutes until softened.
Stir in minced garlic and chopped bell pepper for 2 minutes.
Add ground turkey and cook until browned (5-7 minutes).
Blend in crushed tomatoes, cumin, paprika, cayenne pepper, chili powder, salt, and black pepper.
Bring sauce to a simmer and let reduce for 10-15 minutes.
Create 4 indents in the sauce, crack an egg into each, and cover with a lid. Simmer 5-6 minutes until whites set but yolks remain runny.
Remove from heat and garnish with fresh herbs and optional feta cheese.
Notes
Adjust spice level by adding more cayenne or chili powder
Substitute ground chicken for turkey if preferred
Storage: Refrigerate leftovers for up to 3 days
