1 green bell pepper, sliced
1 medium zucchini, sliced
1 medium onion, diced
3 garlic cloves, minced
2 tbsp olive oil
1 tsp smoked paprika
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 can (14 oz) diced tomatoes (no added sugar)
1 tbsp tomato paste
2 tbsp water (for binding sauce)

Instructions

Heat olive oil in a large skillet over medium-high. Brown turkey sausages
Add onions, garlic, and bell peppers; sauté until softened (5-7 minutes)
Toss in zucchini and cook until tender-crisp (3-5 minutes)
Sprinkle paprika, oregano, salt, and pepper over mixture
Add tomatoes, tomato paste, and 2 tbsp water. Simmer 10 minutes
Drain 1/2 cup fat from pan before serving to keep lean profile

Notes
