Ingredients
1 pound lean ground turkey sausage (halal)
1 cup cherry tomatoes, halved
1/2 cup red bell peppers, chopped
1/2 cup yellow bell peppers, chopped
1 small onion, finely diced
3 cups fresh spinach, chopped
8 large eggs
1/4 cup milk (or unsweetened almond milk)
1/2 cup shredded mozzarella cheese (or provolone)
1 teaspoon garlic powder
Salt and pepper to taste
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
Olive oil for cooking
Instructions
Preheat oven to 375°F (190°C). Heat a large oven-safe skillet over medium heat and add a drizzle of olive oil.
Add the turkey sausage to the skillet and cook for 5-7 minutes, breaking it into small pieces with a spoon until browned and cooked through.
Add the onion and bell peppers to the skillet. Cook for 3-4 minutes until softened.
Stir in the cherry tomatoes, garlic powder, salt, black pepper, and smoked paprika. Cook for 1 more minute.
Add the fresh spinach and sauté until wilted, 2-3 minutes.
Pour in the eggs and milk, stirring gently to combine. Cook on the stovetop for 3-4 minutes until the edges begin to set and the surface looks slightly firm.
Sprinkle the shredded cheese evenly over the top. Slide the skillet into the preheated oven and bake for 15–20 minutes, or until the center is fully cooked and the edges are golden brown.
Allow to cool slightly before slicing into wedges. Serve warm.
Notes
Use a nonstick oven-safe skillet to avoid sticking; substitute spinach with kale or zucchini for variety. Store leftovers in an airtight container in the refrigerator for up to 4 days.
