1 lb ground turkey

1 small yellow onion, diced

1 red bell pepper, diced

1 tsp dried oregano

Instructions
Heat olive oil in a large pot over medium heat
Brown ground turkey, breaking into small pieces
Add onion, garlic, and bell pepper; sauté until softened
Stir in chili powder, cumin, and oregano until fragrant
Add diced tomatoes, pumpkin puree, chicken broth, and kidney beans
Bring to a boil, reduce heat, and simmer 20-25 minutes
Season with salt and black pepper
Serve warm with optional toppings like avocado or lime
Notes
For a smoother texture, blend 1/2 cup of pumpkin puree with a fork before adding to the pot
If time permits, roast red bell pepper for extra caramelization
