Ingredients
1.5 lbs ground turkey
1 medium onion (chopped)
2 celery stalks (diced)
2 medium carrots (diced)
3 cloves garlic (minced)
28 oz crushed tomatoes
2 cups low-sodium chicken broth
1 tbsp olive oil
1 tsp Italian seasoning
1 bay leaf
1/2 tsp salt
1/4 tsp black pepper
12 oz whole-wheat pasta
1/2 cup grated Parmesan cheese (optional)
Instructions
Heat olive oil in a large skillet over medium heat. Sauté onion, celery, and carrots until softened, about 5 minutes.
Add garlic and cook 1 minute until fragrant.
Add ground turkey, breaking up clumps with a spoon, and cook until browned and cooked through.
Stir in crushed tomatoes, broth, Italian seasoning, salt, pepper, and bay leaf. Reduce heat, cover, and simmer 15-20 minutes.
Cook pasta according to package instructions. Toss with sauce and serve with Parmesan if using.
Notes
Use dark meat turkey for a richer flavor. Substitute zucchini or mushrooms for additional vegetable bulk.
Sauce thickens more as it sits – add broth if preferred consistency.
Make ahead: Sauce improves in flavor when stored overnight.
