1/4 cup unsweetened shredded coconut

1 cup diced fresh pineapple
1 tbsp pure maple syrup
2 tsp vanilla extract
1 tbsp grated lime zest
4 scoops plant-based protein powder (vanilla or neutral flavor)

Instructions

Combine quinoa, coconut milk, protein powder, chia seeds, maple syrup, and vanilla in a large bowl
Mix until evenly incorporated
Chill in the refrigerator for at least 8 hours or overnight
Before serving, divide into 4 airtight containers
