Ingredients

Scale

1 cup pitted Medjool dates
1/3 cup tahini
1/2 cup vanilla plant-based protein powder
1/2 tsp ground cinnamon
Pinch sea salt

Instructions

Combine dates and 2 tbsp water in a food processor until softened and sticky.
Add tahini, protein powder, cinnamon, and sea salt. Process until fully combined, scraping down sides as needed.
Using a tamper, pulse to create thick, cohesive dough.
Refrigerate 10 minutes to firm slightly.
Portion into 20 equal balls (about 1-1/2 tsp each) using a small cookie scoop or spoon.

Notes

Store in airtight container up to 5 days at room temperature or 7 days refrigerated.
For stickier dough, add 1/2 tsp water. For nutty depth, sprinkle toasted sesame seeds on top.
Use a tamper to ensure full incorporation of dry ingredients into dates.
