Ingredients

1.5 lbs flank steak
6 cups mixed greens
2 cups cherry tomatoes
1 large cucumber, sliced
1 red onion, thinly sliced
1 avocado, diced
1 cup shredded cheddar cheese
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper

Instructions

Preheat a grill or skillet over medium-high heat.
Season the flank steak with salt, pepper, and garlic powder.
Grill the steak for 4-5 minutes per side for medium doneness. Let rest, then slice against the grain.
In a large serving bowl, add the mixed greens, cherry tomatoes, cucumber, red onion, and avocado.
Top with sliced steak and cheddar cheese.
In a small bowl, whisk together olive oil and balsamic vinegar to make the dressing. Drizzle over the salad or serve on the side.
Toss gently and serve immediately.
