Ingredients
1 lb flank steak (or sirloin)
2 cups mixed bell peppers (red, green, yellow), sliced
1 large onion, thinly sliced
1 cup brown rice, cooked
1 cup black beans, cooked or canned (drained/rinsed)
1/2 cup corn kernels (fresh, frozen, or canned)
1 ripe avocado, sliced
1 lime, cut into wedges
1/4 cup chopped cilantro
1 tbsp olive oil
1 tsp ground cumin
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cayenne pepper (optional)
1/2 tsp sea salt
1/2 tsp black pepper
1/4 tsp pumpkin pie spice (optional inclusion for sublte warmth)
Whisked fajita seasoning (store-bought or homemade, no alcohol)
Instructions
Preheat oven to 400°F (200°C)
Season steak with fajita seasoning and let marinate (15 minutes)
Heat oven-safe pan on stovetop, add oil and sear steak (2-3 minutes per side)
Transfer steak to oven, broil for 5 minutes total (medium-rare)
Rest steak 5 minutes, then slice thinly against grain
In same pan, sauté onion and peppers with 1/2 tsp cumin until tender, no added fat
Stir in corn, beans, chili powder, paprika, and 1/2 cup rice
Arrange in bowl base: rice, beans, steamed veggies
Top with steak, avocado, cilantro, lime, and extra spices
