Ingredients
1.5 lbs flank steak or sirloin, cut into strips
1.5 lbs baby potatoes, halved
1 yellow onion, diced
2 cloves garlic, minced
1 red bell pepper, sliced
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp smoked paprika
1 tbsp fresh parsley, chopped
Instructions
Preheat cast-iron or heavy skillet over medium-high heat
Sear steak strips 2-3 minutes per side until browned but not cooked through
Remove steak and sauté onions/garlic 2 minutes
Add potatoes and fry 6-8 minutes until golden, stirring occasionally
Stir in bell pepper, smoked paprika, salt, and pepper
Return steak to skillet, nestle into potatoes, and cover with lid
Cook 5-7 minutes until potatoes are tender and meat reaches desired doneness
Garnish with parsley before serving
Notes
Use leftover steak for breakfasts or salads
Swap potatoes for sweet potatoes or cauliflower for variety
For stronger flavor, let steak rest at room temperature 30 minutes before cooking
