Ingredients
4 oz lean steak (trimmed of fat), cut into 1/4″ strips
2 tbsp extra-virgin olive oil
1 tbsp lemon juice
1 tsp dried oregano
1 clove garlic, minced
1 pinch salt
1 sheet whole wheat tortillas
8 oz homemade hummus (chickpeas, tahini, lemon, olive oil, smoked paprika)
1 cup shredded lettuce
1/2 cucumber, sliced
1/2 small tomato, chopped
1 tbsp red onion, thinly sliced
Instructions
Pat steak dry and toss with olive oil, lemon juice, oregano, garlic, and salt. Let marinate 15 minutes.
Heat skillet over high heat. Cook steak in single layer until browned (2-3 minutes per side). Let rest 5 minutes then slice into strips.
Warm tortilla. Spread 1/4 cup hummus evenly. Layer steak, lettuce, cucumber, tomato, and red onion. Roll tightly to serve.
Notes
Store unused hummus up to 5 days in fridge. Freeze assembled wraps in freezer bags up to 1 month. For gluten-free, use certified GF tortillas. Substitute steak with grilled chicken for non-meat option.
