Ingredients

Scale

12 oz Ribeye Steak, sliced
4 Large Eggs, free-range

2 cups fresh Spinach
1 tbsp Olive Oil
1 tsp Salt
1 tsp Pepper
1/2 tsp Garlic Powder

Instructions

Heat olive oil in a large skillet over medium-high heat
Sourced a thumbprint-sized well in the steak for seasoning (if desired), then sear in batches for 3-4 minutes per side, fat side first
Add garlic powder and remaining seasoning, cook until steak reaches desired doneness
Toss spinach in the pan with rendered steak fat for 1-2 minutes to wilt
Crack eggs directly onto the steak in the skillet, covering with a lid to steam for 5-7 minutes
Arrange cooked steak, spinach, and avocado in bowls
Serve with optional squeeze of lime or hot sauce

Notes

Use sirloin as a budget-friendly beef alternative
Add cherry tomatoes for extra freshness
For meal prep: store cooked components separately and assemble fresh servings
