Ingredients

8 large eggs
2 cups fresh spinach
1/2 cup feta cheese
1/4 cup milk
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper

Instructions

Preheat oven to 375°F (190°C)
In a large bowl, whisk eggs, milk, salt, and pepper
Chop spinach and add to egg mixture
Fold in crumbled feta cheese
Heat olive oil in an oven-safe skillet
Pour egg mixture into skillet and cook over medium heat for 5 minutes
Transfer skillet to oven and bake for 20 minutes
Cool slightly, slice into wedges, and serve

Notes
