Ingredients

2 cups rolled oats
1 scoop unflavored plant-based protein powder
1/2 cup Greek yogurt
1/2 cup almond butter
1/2 cup honey
1 tsp ground cinnamon
1/2 cup coconut oil
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp sea salt

Instructions

Preheat oven to 350°F
Line 8×8-inch baking pan with parchment paper
Whisk oats, protein powder, baking powder, salt in one bowl
In another bowl, mix yogurt, almond butter, honey, coconut oil, vanilla, and cinnamon
Combine wet and dry ingredients until smooth
Press mixture into prepared pan
Sprinkle 1/2 tsp cinnamon over top
Bake 22 minutes until golden
Cool completely before slicing into 12 bars
