1 lb (450g) raw shrimp, peeled and deveined
2 cups cooked black beans
1 cup frozen corn, thawed
1 red bell pepper, chopped
1/2 red onion, finely diced
1/4 cup fresh cilantro, chopped
1 avocado, diced (optional)
3 tbsp olive oil
2 limes, juice and zest of one
1 tsp ground cumin
1 clove garlic, minced
Salt to taste
Black pepper to taste

Instructions

Preheat oven to 350°F (180°C) or line a plate with paper towels for oil draining.
Heat 1 tbsp olive oil in a skillet, sear shrimp with garlic, cumin, and lime zest until just cooked (2-3 minutes per side).
In a large bowl, combine black beans, corn, bell pepper, red onion, and cilantro.
Whisk lime juice, 2 tbsp olive oil, salt, and black pepper for dressing.
Fold dressing into bean mixture, then add shrimp and avocado (if using).
Taste and adjust seasoning.

Notes

Use leftover grilled shrimp for a quicker version
Add cherry tomatoes or shredded cabbage for extra color
