Ingredients

1 cup rolled oats
1/3 cup natural peanut butter (unsalted)
1/4 cup honey
1/4 cup chia seeds
2 tbsp sesame seeds, divided
1/4 tsp salt
1 cup puffed rice cereal
1 scoop vanilla protein powder (optional)
2 tbsp flaxseed meal (for added protein)

Instructions

In a large bowl, mix oats, chia seeds, flaxseed meal, 1 tbsp of the sesame seeds, and salt.
In a separate bowl, combine peanut butter, honey, and protein powder (if using) until smooth.
Add wet ingredients to dry ingredients and stir until well combined.
Fold in puffed rice cereal for crunch.
Use a tablespoon to form 16 small bites (size of golf balls).
Sprinkle remaining 1 tbsp sesame seeds over bites.
Chill in refrigerator for 30 minutes to set before serving.

Notes

Substitute almond butter for peanut butter if preferred
