Ingredients

1 lb ground turkey
1 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
4 large eggs
8 small flour tortillas
1/2 red bell pepper, diced
1/4 onion, diced
1/4 cup shredded cheddar cheese
1/4 cup chopped cilantro
1 ripe avocado, sliced
1/4 cup salsa
2 tbsp olive oil

Instructions

Preheat skillet over medium heat. Add 1 tbsp olive oil and brown the ground turkey with chili powder, garlic powder, onion powder, and paprika. Remove sausage from skillet.
Whisk eggs, then pour into the same skillet. Cook until just set. Remove eggs from skillet.
In the same skillet, sauté bell peppers and onions until softened. Return cooked turkey and eggs to the pan. Warm tortillas in the oven or microwave.
Assemble tacos with turkey, eggs, sautéed veggies, cheese, salsa, cilantro, and avocado slices.

Notes

Use ground turkey for a lean, pork-free protein source.
Adjust spices to taste.
Add Greek yogurt instead of cheese for a dairy-free option.
Store leftovers in an airtight container for up to 2 days.
