Ingredients

1 cup shelled pistachios
1/3 cup raw rolled oats
1/3 cup chia seeds
1 scoop vanilla protein powder (about 30g)
1/3 cup almond butter (unsalted)
1/4 cup honey
23 Medjool dates, pitted
1 tsp pure vanilla extract
Pinch of salt

Instructions

In a food processor, pulse pistachios, oats, chia seeds, protein powder, and salt until coarsely chopped.
Add almond butter, honey, dates, and vanilla. Process until the mixture sticks together when pressed.
Chill mixture for 15 minutes to firm slightly.
Form into 1.5-inch balls using wet hands.
Store in an airtight container in the refrigerator.

Store in the fridge for up to 5 days or freeze for 2 months
Try adding 1 tbsp cacao powder for a chocolate variation
