Ingredients

2 cups almond flour
1 cup chopped pecans
1 scoop whey or plant-based protein powder (40-50g)
1 cup plain Greek yogurt (unsweetened)
1 large egg
1/4 cup honey
2 tbsp coconut oil (melted)
1 tsp vanilla extract
1/4 tsp ground cinnamon
1/8 tsp sea salt

Instructions

Preheat oven to 350°F (180°C)
Mix almond flour, protein powder, cinnamon, sea salt, and 2 tbsp honey in a bowl
In a separate bowl, whisk Greek yogurt, egg, vanilla extract, and melted coconut oil
Combine wet and dry ingredients, then fold in chopped pecans
Cover with plastic wrap and refrigerate for 15 minutes
Form 12 equal-sized dough balls and place on a parchment-lined baking sheet
Bake for 12 minutes until golden
Cool for 5 minutes before transferring to a wire rack

Notes

For vegan version, use plant-based protein powder and vegan yogurt
Store in an airtight container for up to 5 days in fridge or 2 months in freezer
Microwave each bite for 10-15 seconds to revive texture
