Ingredients
4 boneless skinless chicken breasts
2 oranges (zested and juiced)
1/4 cup low-sodium soy sauce
1 tbsp ground ginger
2 tbsp olive oil (divided)
1/4 cup cornstarch
1 red bell pepper (sliced)
1 red onion (sliced)
1 tsp sesame seeds (for garnish)
2 green onions (for garnish)
Instructions
Pat chicken dry and season both sides with cornstarch
Heat 1 tbsp oil in skillet over medium-high; cook chicken 4-5 minutes per side until golden
Transfer chicken to plate; add remaining oil to same skillet, sauté red onion, bell pepper, garlic until tender
Add orange zest, juice, ground ginger, and soy sauce; simmer 5 minutes
Return chicken to skillet; gently coat with sauce, simmer to thicken
Sprinkle sesame seeds and green onions before serving
Notes
Add fresh cilantro for extra zest
Use coconut aminos instead of soy sauce for gluten-free version
Swap bell pepper with broccoli florets for more fiber
