Ingredients
4 (6-ounce) cod fillets
3 tablespoons extra virgin olive oil
4 cloves garlic, minced
2 large lemons, sliced
1 teaspoon dried oregano
1 tablespoon fresh parsley, chopped
1 cup cherry tomatoes, halved
1/4 cup pitted Kalamata olives
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 400°F (205°C)
In a small bowl, mix olive oil, minced garlic, oregano, parsley, salt, and black pepper.
Place cod fillets in a baking dish and brush both sides with the marinade.
Top each fillet with lemon slices, halved cherry tomatoes, and a few olives.
Bake for 16-20 minutes, until the cod is opaque and flakes easily.
Notes
Cod cooks quickly; check after 16 minutes to avoid overcooking.
