  • Total Time: 30
  • Yield: 4 servings 1x

Ingredients

Scale

4 (6-ounce) cod fillets
3 tablespoons extra virgin olive oil
4 cloves garlic, minced
2 large lemons, sliced
1 teaspoon dried oregano
1 tablespoon fresh parsley, chopped
1 cup cherry tomatoes, halved
1/4 cup pitted Kalamata olives
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

Preheat oven to 400°F (205°C)
In a small bowl, mix olive oil, minced garlic, oregano, parsley, salt, and black pepper.
Place cod fillets in a baking dish and brush both sides with the marinade.
Top each fillet with lemon slices, halved cherry tomatoes, and a few olives.
Bake for 16-20 minutes, until the cod is opaque and flakes easily.

Notes

Cod cooks quickly; check after 16 minutes to avoid overcooking.
Fresh herbs (e.g., rosemary, thyme) can be added for more layers of flavor.
Marinate cod for at least 10 minutes before baking to maximize flavor.
Serve with quinoa, brown rice, or roasted vegetables for a complete meal.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
