Ingredients

2 cups rolled oats
1/2 cup shredded unsweetened coconut
1 cup almond butter
1/4 cup honey
1 scoop vanilla whey protein powder (30g)
1 cup fresh mango, diced
1/4 cup chia seeds (optional)
2 tbsp coconut oil, melted

Instructions

Prep bowls and tools
Combine oats, coconut, chia seeds in a large bowl
Mix almond butter and honey until smooth
Add protein powder and coconut oil, blending well
Fold in diced mango
Roll mixture into 12 bite-sized balls
Place on a baking sheet and refrigerate 20 minutes

Notes

Store in airtight container in fridge for up to 5 days
Freeze for longer storage
Mango can be swapped with diced pineapple
Coconut oil can be replaced with more almond butter
