Ingredients

2 cups high protein all-purpose flour
1/2 cup unsalted coconut oil, melted
2 large eggs
1 cup plain Greek yogurt (non-fat or low-fat)
1/2 cup milk (dairy or plant-based)
1/4 cup honey
Zest and juice of 1 large lemon
1/2 teaspoon vanilla extract
2 tablespoons poppy seeds, divided
1 teaspoon baking powder
1/4 teaspoon salt

Instructions

Preheat oven to 350°F (180°C)
Grease a 9×5 inch loaf pan and set aside
In a large bowl, whisk together high protein flour, baking powder, and salt
In a separate bowl, mix eggs, Greek yogurt, milk, honey, lemon zest, lemon juice, vanilla, and 2 tablespoons poppy seeds until smooth
Pour wet ingredients into dry ingredients and stir until just combined
Transfer batter to prepared loaf pan and smooth the top
Optional: sprinkle remaining 2 tablespoons poppy seeds on top
Bake for 45 minutes or until a toothpick inserted near the center comes out clean (optional: cover loosely with parchment paper for last 15 minutes to prevent over-browning)
Cool completely in the pan before slicing
Glaze: whisk 1/4 cup powdered sugar, 1 tablespoon honey, and 1 teaspoon lemon juice, then drizzle over cooled loaf

Notes

Use freshly squeezed lemon juice/zest for maximum flavor
To increase protein: substitute 1/4 cup flour with ground flaxseeds or chia seeds
For extra moisture: add chia seeds or unsweetened applesauce to the glaze
Store in an airtight container in the refrigerator for up to 4 days or freeze slices for 3 months
The honey glaze is optional but recommended to enhance sweetness without alcohol
