Ingredients
Whole-grain lasagna noodles (12–16 sheets)
1 lb ground turkey (or lean ground beef)
1 cup cottage cheese (full-fat or 2%)
2 cloves garlic, minced
1 jar marinara sauce (24 oz)
8 oz part-skim mozzarella cheese
1 cup fresh spinach, chopped
1 small onion, diced
1 tsp Italian seasoning
Salt and pepper to taste
Fresh basil for garnishing
Instructions
Preheat oven to 375°F (190°C)
Boil lasagna noodles until al dente and drain
Sauté onions and garlic in a pan, add ground turkey and cook until browned
Stir in marinara, Italian seasoning, salt, and pepper to make meat sauce
In a bowl, lightly whip cottage cheese for a ricotta-like texture
Assemble layers: noodle sheet, meat sauce, cottage cheese, spinach, shredded mozzarella
Repeat layers, ending with a top layer of sauce and mozzarella
Bake uncovered for 25–30 minutes until golden and bubbly
Let rest 10 minutes before slicing

Substitute ground turkey with cooked lentils for a vegetarian option
