Ingredients
1 cup almond flour
1/2 cup unsweetened cocoa powder
2 tablespoons espresso powder
3/4 cup whey protein powder (vanilla or chocolate flavor)
1/2 teaspoon salt
1/3 cup coconut oil, melted
1/2 cup pure maple syrup
2 large eggs
1/2 cup dark chocolate chips (non-alcoholic)
1/2 cup chopped walnuts
Instructions
Preheat oven to 325°F (160°C)
In a large bowl, whisk almond flour, cocoa powder, espresso powder, protein powder, and salt
Add melted coconut oil, maple syrup, and eggs. Mix until smooth
Fold in chocolate chips and walnuts
Chill dough in refrigerator for 15 minutes
Portion into 24 bite-sized balls and place on parchment-lined baking sheets
Bake at 325°F for 18-20 minutes or until edges are firm
Cool completely, then refrigerate for at least 1 hour before serving
Notes
For best texture, chill dough before portioning
Use a melon baller for uniform bites
Store in an airtight container in fridge for up to 5 days
