Ingredients

1 1/2 cups pitted dates
3/4 cup almond butter (smooth or chunky)
1/3 cup coconut flour
1/2 cup shredded coconut
1/3 cup coconut oil, melted
1/2 tsp pure vanilla extract
1/4 tsp salt
80g unflavored plant-based protein powder (e.g.,豌豆protein)
1/4 cup additional shredded coconut, for coating

Instructions

Pit and roughly chop dates. In a food processor, blend dates and almond butter until sticky.
Mix in coconut flour, melted coconut oil, vanilla, and salt. Add protein powder and process until combined.
Roll mixture into 16 equal-sized bites. Coat each bite in shredded coconut.
Chill in refrigerator for 15 minutes before serving or storing.

Notes

For best texture, use dates at room temperature.
Substitute sunflower seed butter for nut-free version.
Store in airtight container in refrigerator for up to 5 days or freeze for 2 months.
Add 1/4 tsp cinnamon or 1/4 tsp cardamom for extra flavor.
