Ingredients

1 cup unsweetened shredded coconut
1 cup chocolate protein powder
½ cup coconut oil
½ cup almond butter
⅓ cup maple syrup
¼ cup cocoa powder
1 teaspoon vanilla extract
¼ teaspoon sea salt
½ cup dark chocolate chips
¼ cup toasted coconut flakes

Instructions

Mix shredded coconut, protein powder, cocoa powder, and sea salt in a bowl.
In a separate bowl, combine coconut oil, almond butter, maple syrup, and vanilla extract until smooth.
Stir wet ingredients into dry mixture until fully incorporated.
Press dough into a lined 8×8-inch baking dish.
Bake at 350°F (175°C) for 10 minutes.
Sprinkle chocolate chips and toasted coconut flakes over the hot base.
Chill for 30 minutes until firm. Cut into 12 bars.

Notes

Store in an airtight container in the fridge for up to 5 days or freeze for 1 month.
Substitute almond butter with peanut butter or tahini.
Toasting coconut flakes enhances flavor before garnishing.
